korokke

コロッケ korokke is a deep-fried dish consisting of potato, minced meat and minced vegetable. It is simple to make and so tasty.

I like the recipe by sumokitchen.com. She explained the steps to make korokke so well.

3-4 (flourly) potatoes, peeled
1/2 onion, minced
1/2 carrot, minced
200g minced pork
1 tsp dashi (granulated fish stock)
2 tsp sugar
1 tbs sake
1 tbs mirin
4 tbs soy sauce
2 eggs, beaten
panko
flour

First boil the peeled potatoes in a pot with salted water. When the potatoes are soft, pour away the remaining water and mash the potatoes. Fry the minced onion and minced carrot in a pan, add minced meat and season it sugar, dashi, sake, mirin and soy sauce and let it simmer for five mins. Then mix the meat and the mashed potatoes together well, shape croquettes in any shape you like, roll them in flour, in beaten eggs, then in panko and fry them ntil goldenbrown. Serve the korokke with salad, ketchup, mayo and/or tonkatsu sauce.
