yeongeun jorim

I found a really tasty recipe for Yeongeun Jorim 연근조림 (Korean Lotus Root ) on the blog Evan’s Kitchen Ramblings.

Since I only knew lotus roots as a dessert with red beans, I tried out this recipe.

My first trial:

It doesn’t have the same glaze as in the recipe’s picture but it still has a good taste.

For Yeongeun Jorim you only need:

450g prepacked sliced lotus roots
300ml water
100ml soy sauce
3 tbsps sugar
3 tbsps korean rice syrup
1 tbsp sake
1/2 tbsp sesame oil
sesame seeds for garnish

It is pretty simple since you only have to boil water, sugar and soy sauce in a pot and simmer the lotus roots in it until the sauce is evaporated. Add the rice syrup when only 1/3 of the sauce is left. Add sesame oil and sesame seeda before serving.
